Surtout connu en Occident pour lutter contre la nausée, le gingembre est probablement utilisé depuis plus longtemps que n’importe quel phytoremède dans le monde. Les Chinois l’emploient à des fins à la fois médicinales et alimentaires, souvent avec le poisson et les fruits de mer, car il empêche l’intoxication.
Le gingembre frais est riche en potassium, en magnésium, en phosphore, en fer et en vitamine C. Il contient également des huiles essentielles et de puissants antioxydants (le gingérol et le zingérone).
